Grilled meatballs with herbs and parmesan:


  • 1/2 kilo ground chuck.
  • 1 egg.
  • 2 cloves of minced garlic.
  • 1/2 cup Parmesan cheese.
  • 1/2 cup rusk.
  • 1/2 cup finely chopped onion.
  • 1/4 cup chopped fresh basil.
  • 1/4 cup fresh chopped parsley.
  • 1/4 cup olive oil.
  • 1/2 teaspoon Italian spices.
  • 1/2 teaspoon kosher salt.
  • 1/2 teaspoon ground black pepper.


  • In a large bowl, combine ground chuck, eggs, garlic. then add Parmesan cheese, breadcrumbs, onions, basil. and parsley using clean hands.
  • Season with Italian spices, salt, and pepper.
  • Shape the mixture into approximately 1-inch meatballs, then arrange on a grill tray.
  • Cover and put in the refrigerator for at least an hour.
  • When ready, brush the meatballs with vegetable oil, and cook on a preheated grill. over medium heat, covering until fully cooked (about 12 to 15 minutes). Serve with your sauce or over pasta.

Italian Smoked Meat Balls:


  • 1 kg ground chuck.
  • 1/4 kilo of ground pork.
  • 2 slices of bacon, finely chopped.
  • 1 clove of minced garlic.
  • 1 12 cups white diced bread without a crust.
  • 1 cup grated Parmesan cheese.
  • 1/2 cup chopped onion.
  • 1/4 cup milk.
  • 2 tablespoons freshly chopped parsley.
  • 1 tablespoon olive oil.
  • 1 teaspoon kosher salt.
  • 1/2 teaspoon ground black pepper.
  • 1/2 teaspoon dried basil.
  • 1/4 teaspoon dried oregano.
  • Basil leaves to serve.
  • Marinara sauce to serve.


  • Mix bread and milk in a bowl.
  • Remove the milk from the bread and discard the remaining milk.
  • Heat olive oil in a frying pan over medium heat and cook bacon, garlic, and onions until bacon is soft and vegetables are tender.
  • Add the mixture to the baking pan and let it cool.
  • Add the envelope bottom, ground ham, parmesan cheese, parsley, salt, pepper, basil, and oregano.
  • Grease your hands with vegetable oil and mix into 1 1/2 inch meatballs.
  • Arrange the meatballs on a grill grid, and cook them on a preheated grill. over medium-high heat until fully cooked about 25 to half an hour.
  • Pour the marinara sauce over the grilled meatballs and serve with fresh basil leaves.
